The Lost Legs of Napa: A Technical Remedy for White Wine

The evolution of the Napa Valley wine scene is often told through the lens of its legendary Cabernet Sauvignons, but a significant shift occurred when Sutter Home’s White Zinfandel exploded in popularity. This movement fundamentally altered how winemakers approached white grapes. In the rush to meet market demand for crisp, pale, and accessible wines, the industry adopted a practice typically reserved for mass production: minimizing or completely forgoing the time grapes spend soaking in their own pulp after the initial crush. This shift prioritized speed and clarity over the structural complexity that once defined high-end white viticulture.

As a result of this popular practice, many modern white wines have “unlearned” a classic characteristic known as “legs.” Often referred to as tears or cathedral windows, these streaks of liquid form and slide down the inside of a glass after the wine is swirled. While many consumers believe legs are merely a sign of alcohol content, they are actually a byproduct of the Gibbs-Marangoni effect—a complex interaction of surface tension and evaporation. In the world of fine wine, these legs represent a density and viscosity that indicate a wine’s body and its potential for a lingering, sophisticated mouthfeel.

The remedy for winemakers seeking to restore this lost quality is found in the “soak.” To achieve white wine with true legs, the juice must remain in contact with the pulp right after the crush, much like the traditional process for red grapes. This skin contact allows for the extraction of phenolics and glycerol-like compounds that provide the necessary “grip” and surface tension. By reintroducing this maceration period, winemakers can move beyond the thin profiles popularized by the White Zinfandel era and return to a style of white wine that possesses both structural integrity and a visual signature in the glass.

Restoring this technique is more than just a nod to tradition; it is a commitment to the technical excellence of the craft. When we allow white grapes the time to soak in their own essence, we produce a final product that is richer, more resilient, and visually captivating. It is time for the industry to remember what was unlearned and ensure that our white wines once again possess the “cathedral windows” that signal a truly high-quality vintage.

IPECAC Heat Problem

Working with heat, there are a few issues to cope with.

  • Starbucks has a Pumpkin Spice Latte. It is Starbucks item number 418. Hot. Pumpkin Spice is a remedy for the bad Dalmatian dogs. Not every dog is a Dalmatian. Pumpkin Pet Insurance; pumpkin.care
  • Québec City in Canada has a heat problem.
  • People that have had IPECAC emetic for food poisoning also run a little hot. In Gevluef, there are writings about IPECAC. It is treatment for the Cork in the wine bottling process.

This is the list of coping issues for heat as far as I can tell.

Saint Scholastica PR

St. Scholastica and her twin brother, St. Benedict of Nursia (c. 480–543), were influential 6th-century Italian saints who founded Western monastic communities. The most famous story tells of their last meeting, when a storm, called by her prayer, forced Benedict to stay, allowing them to converse on spiritual matters all night; “PR.”

Ash Tree

Ash Tree

We have a lot of Ash Trees here at the Casa. This picture is of one that was recently trimmed. Notice the Sap is bleeding; it’s uniquely red in color.

The Cambium is a vital, thin layer of living tissue in trees, located between the bark and the wood (xylem), that produces new cells for the tree’s outward growth, making trunks and branches thicker each year.

Ash Trees make sense to people that have Phocomelia; A Mental Health issue. In English, “Fresno” (from Spanish) means “ash tree,” named for the many ash trees along California’s San Joaquin River where the city of Fresno is located.

The Old And New Twenty

Foreign people don’t know what our US currency looks like. It has the presidents off to the left side. Since October 10th, my goal is to make a plan for a fair money fix. I need the president to be in the middle of the bills like this old twenty from 1985. Fixing our money will be a win for Democracy. All you need to realize here is that the 46605 painting has made our USA currency fair since 1997.

Staff Management Gun

Although the Downsiders story is based on a Picture 2(d) since 1988, there has become a real gun since 2001. It is part of my body (Serzone). It’s a safe gun though. The Firing pin was removed June 2022.

Sending it to the USPS for the Downsiders purpose of getting a gun is my best plan

This just says that the Downsiders’ purpose is to get a gun. That is the first directive in the Downsiders story. So, obviously the Seattle USPS needs to get a gun; that I have. I have satisfied this first directive of the Downsiders for the Post Office. They have my gun. This opens up a span of possibilities. The Post Office can work with the rest of the story having this first directive satisfied.

We tried keeping the Downsiders’ original Compact Disc at the Camarillo Post Office. It didn’t work out. So, as of now the Disc is at the Seattle USPS. They also have an accessible copy of the Compact Disc as well as the original in the 5144 packaging.

The final chapter in this saga is to work on the gun’s history. That’s G-men 1935. The movie is announcing that federal agents will be carrying guns. That was a law in 1935. Feng Shui

Feng Shui is an ancient Chinese practice, meaning “wind and water,” that aims to create harmony and balance in a space by arranging its environment, objects, and architecture to optimize the flow of vital energy, or Chi (Qi).

Chi (Qi)

The concept of Chi (Qi) is the fundamental premise of Feng Shui theory and largely the basis of Taoism and traditional Chinese philosophy. Chi is the vital life force or energy that flows through all living things and their environments. It creates harmonious environments by balancing the flow of energy.  Feng Shui aims to improve the flow of Chi to bring positive energy into a space.
