The Lost Legs of Napa: A Technical Remedy for White Wine

The evolution of the Napa Valley wine scene is often told through the lens of its legendary Cabernet Sauvignons, but a significant shift occurred when Sutter Home’s White Zinfandel exploded in popularity. In the rush to meet market demand for crisp, pale, and accessible wines, the industry adopted a practice typically reserved for mass production: minimizing or completely forgoing the time grapes spend soaking in their own pulp after the initial crush. As a result of this popular practice, many modern white wines have “unlearned” a classic characteristic known as “legs.” Often referred to as tears or cathedral windows, these streaks of liquid form and slide down the inside of a glass after the wine is swirled. While many consumers believe legs are merely a sign of alcohol content, they are actually a byproduct of the Gibbs-Marangoni effect—a complex interaction of surface tension and evaporation. In the world of fine wine, these legs represent a density and viscosity that indicate a wine’s body and its potential for a lingering, sophisticated mouthfeel.

The remedy for winemakers seeking to restore this lost quality is found in the “soak.” To achieve white wine with true legs, the juice must remain in contact with the pulp right after the crush, much like the traditional process for red grapes. This skin contact allows for the extraction of phenolics and glycerol-like compounds that provide the necessary “grip” and surface tension. By reintroducing this maceration period, winemakers can move beyond the thin profiles popularized by the White Zinfandel era and return to a style of white wine that possesses both structural integrity and a visual signature in the glass.

Restoring this technique is more than just a nod to tradition; it is a commitment to the technical excellence of the craft. When we allow white grapes the time to soak in their own essence, we produce a final product that is richer, more resilient, and visually captivating. It is time for the industry to remember what was unlearned and ensure that our white wines once again possess the “cathedral windows” that signal a truly high-quality vintage.

Dark Thinking The AB

This is another post in which I am dealing with the dossier; At Last Light. Much of it is written for after I die. It is dark writing.

In the example of when the AB has suffered a loss, the AB also has dark thinking. It is very difficult thinking for the AB type when they are alone. The person has dark thinking without their life support.

Recall the AB blood type marries. Rules for Being Human by Dr. Chérie Carter-Scott is therapy for the AB. It is meant to help the AB type person manage. It is here because I am having trouble with a bad book that has dark writing.

Jeff and Disability Theory – At Last Light; A Dossier

I’m having a problem with a book from 2018. The readers want to hurt me. Read this post if you have the bad book and want to figure out what to do going forward.

The ADA is the smoking gun. The Americans with Disabilities Act of 1990 is how we lost Thomas Jefferson. Because of the ADA we were feeling especially Jeff. With disability as the catalyst Jefferson didn’t make it through.

What kind of disability is the ADA referring to? There is a genetic and accidental disability. R for genetic disorder; and, T for Traumatic injury. I think I want the disabled person, the kind that is by accident to claim me and care for me and my Mental Health. I want the traumatic injury type person to have the book. It is useful for these people because they have PTSD. The book “Common to get the word out” and “Common Hate.” The book can empower a person to learn about me even though it is bad. They survived a terrible accident. They can come to general terms.

When the Government developed the ADA, were disabled people complaining about Jeff? No one is listening, not to your disability. I believe that the disabled community didn’t like Jeff. I’m Jeff, why would I want to cremate Thomas Jefferson? In 1990 I was 22 years old. I didn’t have anything in mind. I was just being Jeff.

The people that have the book and are disabled can correctly use it as a KEY to make access; presumably to use it for a government program. I need to do one of two things with the bad book. Subtract the book because it is a threat; or, give it to a handicapped person. The reason to throw it away; the book was not considered accurate. Jeff is a particular person and not a general name because of the biographical information. A dossier, it is accurate enough to identify me; Dead or Alive.

I hope you have some insight as to how to go forward with this problem. I know it is bad. I have suffered some losses. I just want to survive it.

Comment: September 26, 2024: I know that I am being threatened by this book. Other people may be experiencing it too. They may be experiencing a MOOD. There is a whole chapter in the DSM about Mood. To me the MOOD is a kind of Pi.
