White Wine With Legs

The Lost Legs of Napa: A Technical Remedy for White Wine

The evolution of the Napa Valley wine scene is often told through the lens of its legendary Cabernet Sauvignons, but a significant shift occurred when Sutter Home’s White Zinfandel exploded in popularity. This movement fundamentally altered how winemakers approached white grapes. In the rush to meet market demand for crisp, pale, and accessible wines, the industry adopted a practice typically reserved for mass production: minimizing or completely forgoing the time grapes spend soaking in their own pulp after the initial crush. This shift prioritized speed and clarity over the structural complexity that once defined high-end white viticulture.

As a result of this popular practice, many modern white wines have “unlearned” a classic characteristic known as “legs.” Often referred to as tears or cathedral windows, these streaks of liquid form and slide down the inside of a glass after the wine is swirled. While many consumers believe legs are merely a sign of alcohol content, they are actually a byproduct of the Gibbs-Marangoni effect—a complex interaction of surface tension and evaporation. In the world of fine wine, these legs represent a density and viscosity that indicate a wine’s body and its potential for a lingering, sophisticated mouthfeel.

The remedy for winemakers seeking to restore this lost quality is found in the “soak.” To achieve white wine with true legs, the juice must remain in contact with the pulp right after the crush, much like the traditional process for red grapes. This skin contact allows for the extraction of phenolics and glycerol-like compounds that provide the necessary “grip” and surface tension. By reintroducing this maceration period, winemakers can move beyond the thin profiles popularized by the White Zinfandel era and return to a style of white wine that possesses both structural integrity and a visual signature in the glass.

Restoring this technique is more than just a nod to tradition; it is a commitment to the technical excellence of the craft. When we allow white grapes the time to soak in their own essence, we produce a final product that is richer, more resilient, and visually captivating. It is time for the industry to remember what was unlearned and ensure that our white wines once again possess the “cathedral windows” that signal a truly high-quality vintage.

IPECAC Heat Problem

Working with heat, there are a few issues to cope with.

  • Starbucks has a Pumpkin Spice Latte. It is Starbucks item number 418. Hot. Pumpkin Spice is a remedy for the bad Dalmatian dogs. Not every dog is a Dalmatian. Pumpkin Pet Insurance; pumpkin.care
  • Québec City in Canada has a heat problem.
  • People that have had IPECAC emetic for food poisoning also run a little hot. In Gevluef, there are writings about IPECAC. It is treatment for the Cork in the wine bottling process.

This is the list of coping issues for heat as far as I can tell.

Categorical Imperative

This is amazing. My sister made access. She is no longer speaking to me. I have to disclose the matter because it pertains to my mental health and my relationship with Staff.

The categorical imperative (CI) is a central concept in the moral philosophy of 18th-century German philosopher Immanuel Kant: https://en.wikipedia.org/wiki/Categorical_imperative

On  August 9, 2024. I found my sister; absolutely for certain.

I have needed to find her since August 16, 1990 where I exclaimed to Marcus the door man, “I need to find my sister!” He was the last person I talked to before getting kicked out of the sonic youth concert. I was dealing with this scenario going forward at UC Santa Cruz into the 1990-1991 school year.

In responding to Staff, I want to deal with the circumstances. What else was going on besides the Categorical Imperative we experienced on August 9th? She was a reader of Maurice-Merlot Ponty’s essay Eye and Mind. And, she got the Rhinoplasty I recommended. I have written about Rhinoplasty in the past on Gevluef. How’s that going?

Gevluef search link for Gevluef on wordpress.com search “rhinoplasty.” https://gevluef.wordpress.com/?s=rhinoplasty

My sister is working out. She did my directive to get a Rhinoplasty. She is experiencing thoughts that make sense to other people. Since August 9th, she has decided not to talk to me. I am sorry about that. The Rhinoplasty is absolutely the best of all possible procedures. I got one in 1991. Rhinoplasty has been a directive for our family since our early childhood when we went to the dentist: https://gevluef.com/2024/08/19/the-gaps-are-closing/ Please note that I have made our dental story public against her wishes. Besides Eye and Mind, the dental story is the enigma about us.

For her to work out this problem, the Categorical Imperative is the thing that happened leading to our rift.

The Gaps Are Closing

In the early 70’s people told you what to do. Somebody told my father what to do for the space between the teeth. Tori and I both had gaps between our teeth. Father took us to the dentist where we were sleepy from the operation which we had at the same time. We had the muscle removed above our two front teeth so that when our adult teeth grew in the gaps would close.

Without that muscle our septum was exposed and became deviated. We were sleepy at the dentist, and our septum’s eventually deviated. So, we were generally sleepy with our depressed conditions. We both got the remedy.

I got a Rhinoplasty in October 1991. It straightened my septum. And now, going forward, Tori got one recently as well. She is working out. Like I experienced years ago she is experiencing her improving condition. That’s two rhinoplasties in the same family.

The story is working out. I think that father was a winemaker and he thought that we were like wine. I’m thankful that Tori got one. She didn’t have to like me. I had a mental illness. All she’s dealing with now is her straightened septum.

Comment: August 24th, 2024; Tori responded to my Blog post. She denies having a nose job.

Friday Key Day

Using “Key” as a general idea, there are search results at Wikipedia of various iterations of Key: https://en.wikipedia.org/wiki/Key

The picture is from the Ilco Key Company in North Carolina: https://www.ilco.us/category/keys

Key Cylinder – Often used in front door locks. It’s cylindrical in shape with a flat key inserted at the end. A set of pins are arranged along the length of the cylinder, and when you insert the key and turn it, they line up so the door opens.

Comment: August 21, 2024: Realized Key keeps keep. Boom Box CD electrical smell.
